What You Need!
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated
Make It!
HEAT oven to 375ºF. Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired. Set aside.
BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken bundles in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve topped with spaghetti sauce and remaining mozzarella.
Serve with Bread, Salad, Veggie!
I made asparagus..it was yummy with it. I have discovered a very easy way to make asparagus...I am sure everyone knows this...I discover things late for some reason..but for those who don't know a good way to cook them..here it is:
Oven baked Asparagus
Wash them, cut the bottom offs and then put them in a baking dish. Drizzle olive oil on top, add garlic salt, salt, pepper and then rotate the pan around until all the asparagus is well coated. Bake in the oven for about 14 minutes or until tender. They are yummy! Both my kids (4 &6 eat them and they are picky eaters!)
ENJOY!!! This dish is so excellent...it is restaurant quality! If you have company coming over for dinner...MAKE THIS! The presentation is beautiful and the taste is amazing! I am not a fan of spinach...but it is so good in this recipe! Just try it...you will love it!

So, you're not that far behind, I've never done asparagus like that, and I tried it last night... YUM! I loved it. I will never boil it or steam it again. It was so delicious and still had some bite. The chicken was so good too. Jon and Jacob really liked it too. Thanks!
Jon ate this for lunch the next day and really liked it! I wasn't sure he would like the spinach, but he loved it!
Roasting asparagus is my favorite way of preparing and eating it! Also try adding a little lemon zest to it (with the garlic and oil...mmmmmmm).
Roasted carrots, roasted green beans, roasted cauliflower--you'd be amazed how tasting veggies can be when you roast 'em!
